Bombay Sandwich with Coriander and Mint Chutney

There is lots going on at home this week, loud TV, snatching and hiding of TV remote controls, music blaring from behind bathroom and bedroom doors, laughter, arguments, play dates, door bell ringing at all times of the day and of course lots and lots of food. Yes kids are home this week for the half term holiday. That means lots and lots of cooking for me and I wonder how but they are always hungry and it keeps me busy at all times but I love it when they are around me and at home. I try to make a variety of dishes to cater for the different needs and taste buds of my 3 children.
With one into healthy food, another needing energy for the upcoming exams and my little one who is a very fussy eater and loves her cheese and chocolates.
Today I make Bombay Sandwiches for lunch as I think it would suit everyone at home and whoever decides to pop over.

I start of with

Coriander and Mint chutney

1 Bunch fresh Mint
1 Bunch fresh Coriander
1 fresh raw Mango (can use fresh lemon too)
3 Fresh green chillies
2 tsp Sugar
Salt to taste

Method

Wash, and separate the leaves of fresh mint from its stem.
Wash and cut the thick stems of the coriander leaving the fine stems with its leaves.
Wash mango and cut the ends of the chillies
blend all the ingredients in a blender until very smooth
Add any extra salt or if the mango is sour add more sugar to taste
store in an air tight container in the fridge

Bombay Sandwiches

Ingredients

1 large Potato
1/2 cucumber
1 large tomato
I small onion
grated cheese
coriander and mint chutney
pepper
chat masala
white medium sliced bread

Method

Boil the potato and slice it. I use baking potato, wrap it in kitchen towel and microwave it for 5 minutes.
Slice all the other vegetables and grate the cheese.
Butter two slices of bread. One side with butter and the other with chutney.
The buttered side of the bread goes facing down on a Panini maker
On the side of the chutney arrange the boiled potatoes, cucumbers, tomatoes, onions and cheese. Sprinkle chat masala (about half a teaspoon) and pepper. Top it up it with cheese and cover with the other slice of bread having the buttered side facing up.
Toast the sandwich. Enjoy it with chips or own its own.
